Easy Cheesy Spinach Pasta

This is really quick and easy, you only need 4 ingredients and makes a nice meal for two or serve with side salad and feed 4 people.

Easy Cheesy Spinach Pasta


  • 1/2 x 500 gram pack spaghetti
  • 250gram tub of ricotta – you can use light ricotta
  • 125 gram pack of shaved or grated parmesan
  • 100 grams of baby spinach - washed


  • Cook and drain pasta, set aside
  • In the same pot that you cooked the pasta, add the tub of ricotta, spinach and half of the parmesan cheese, stir on a medium heat for about 4 mins
  • Once the spinach is wilted the sauce is cooked, add the cooked drained pasta back in the pot and stir / toss the pasta and sauce to combine
  • Serve on 2 plates
  • Top with a sprinkling of parmesan cheese and pepper

This is a nice lunch dish or quick weeknight dinner. Serve with a green salad and a glass of white wine if you like. You may also like to toast some pine nuts and sprinkle on top.
