Family Favourite – Tuna Bake

One of Julia’s family’s favourite meals is Tuna Bake.

Made with a combination of leftover vegetables and rice covered in a mornay sauce, it is a delicious dinner.

Easy to make as you only need to make the mornay sauce and assemble if you follow the suggestions about keeping and using leftovers to make it.

Tuna Bake


  • 1 x 425 gram tuna, drained
  • approximately 3 cups leftover boiled/steamed veges – start a container in the freezer for this purpose. Any time you serve cooked vegetables, place the leftovers in this container until you have enough to use in a meal.
  • approximately 3 cups leftover cooked rice – again, keep some in the freezer ready to use as a base for a meal (if making from scratch then 1 cup raw rice usually will equal 3 cups cooked)
  • 2 heaped tablespoons flour
  • 2 good tablespoons olive oil
  • 2 cups milk – Julia uses powdered milk for cooking
  • a handful grated cheese
  • 1 teaspoon Massel vegetable stock powder
  • squirt of mayonnaise
  • 2 good handfuls grated cheese, extra – to cover dish before baking
  • handful of potato chips, crushed – optional – a sensible way to use up the last few chips in the bottom of the bag!


Make mornay sauce:

  • Place flour and olive oil in a microwave safe jug and cook on high for 30 seconds
  • Stir, add milk and stir again
  • Microwave for 90 seconds then whisk
  • Add stock powder and repeat the process until the sauce has thickened – usually 2 or 3 blitzes depending on the microwave
  • Add grated cheese and mayo and stir to combine

Assemble the bake:

  • Spread rice in a layer in a lasagne dish
  • Cover with vegetables and drained tuna
  • Pour sauce over and sprinkle with grated cheese and chips if using
  • Bake in oven at 180 deg C for about 30 mins or until golden brown
