Mushroom Meatballs

Some people have a problem with using tinned soups as the base for a meal. Most of those same people do not have a problem with opening a jar of ready made simmer sauce. If you think about it logically, there is no difference. Tinned soup was the pre-cursor to today’s Chicken Tonight and similar. The Sisters would not use tinned soup every day but feel that these soups do have their place in the kitchen for the odd easy meal.

Always a winner, the Mushroom Meatballs recipe that is ever popular in Julia’s house was given to her by her mother-in-law. It originally came from the label of a tin of condensed mushroom soup. Not strictly speaking a road test as such, Julia has tweaked the recipe and makes her meatballs in a very specific way using grated carrot, zucchini, onion and garlic.

Mushroom Meatballs

Ingredients:

500 grams quality beef mince

1 small brown onion, finely chopped

1 clove garlic

1 carrot, grated

1 zucchini, grated

1 teaspoon mixed dried herbs

1 egg

1/2 cup quick cooking rolled oats (oats are an excellent binder instead of bread crumbs)

1 finely chopped onion, extra

1- 2 cloves garlic, extra – depending on personal preference or leave out

1 tin mushroom soup

1 cup sliced mushrooms (approx.) or 1 tin sliced mushrooms

2 good sized tablespoons sour cream to be added just prior to serving

Method:

Combine beef mince, onion, garlic, carrot, zucchini, herbs, oats and egg – mix well.

Shape into small meatballs.

Place meatballs on two trays lined with baking paper.

Bake at 180 deg C for about 20 – 30 mins until lightly browned, giving the trays a shake partway through cooking to turn the meatballs.

Place finely chopped onion in the bottom of a casserole dish.

Place meatballs on top of onion.

Combine mushroom soup, mushrooms and garlic – pour over meatballs.

Cover casserole dish and bake at 180 deg C for about 45 mins.

Stir through sour cream just before serving.

Serve with mashed potato, pasta or rice with steam veges of your choice.

This can also be done in the slow cooker. Just follow recipe and cook in slow cooker on low for about 6 hours.
