Rowena’s Weekend Breakfast

The weekend is a good time to do those things you may not normally get to do, like eating a relaxed cafe-style hot breakfast.

Here is Rowena’s version of a hot breakfast.  Super yummy, it is also sensible as it is a bit lighter than a traditional fry-up.


  • 4 eggs – (2 eggs per person)
  • a grating of cheese – use what you have in the fridge
  • dash of milk
  • 1 nice ripe avocado
  • 1 can salt reduced baked beans
  • 8 medium  mushrooms – slice (4 mushrooms per person)
  • Bread of your choice – to toast


  • Scramble eggs – whisk eggs, cheese and milk
  • Heat non stick fry pan – spray with oil
  • Add eggs to pan and slowly move around pan
  • Once eggs are cooked, set aside on a large plate and sprinkle with cheese just before serving
  • Wipe out the frypan, spray with oil and cook the sliced mushrooms on a medium heat
  • Heat baked beans on stove or microwave
  • Half and slice avocado – I like to fan the avocado so it looks a bit fancy
  • Toast your bread
  • Serve – toast on the side with eggs next, mushrooms, and avocado
  • Serve baked beans in a ramekin so they don’t run all over the plate

You will notice there is no meat! Rowena prefers this option as it is not as greasy as the traditional fry up. If you have teenage boys or others who do prefer the addition of meat, you may like to cook some bacon or sausages. For further vegetarian options you can add hash browns or wilted green spinach.

If you can set aside the time, this is a fabulous way to start the day especially if you are going out and having a busy day as weekend days often are!
