Pikelets are another old-fashioned homemade treat loved by everyone.

Rowena was at a friend’s house recently and her friend made pikelets for afternoon tea.

Rowena remembers fondly that she used to love pikelets as a child and they are so easy to make.



  • 1 cup self raising flour
  • 3/4 cup milk
  • 1 egg
  • 1 teaspoon vanilla essence
  • 1/4 teaspoon bicarb soda
  • butter to grease pan


  • Sift the flour and bicarb soda
  • Whisk the egg and milk together then add to the sifted flour
  • Add the vanilla
  • Whisk the ingredients till nice and smooth
  • Heat a good non stick pan on medium
  • Spoon mixture into pan – Rowena likes to have about 3 pikelets cooking at once
  • Turn once bubbles have formed over surface and cook the other side
  • As the pikelets cook set aside on a large plate

Server with jam or honey. Rowena doesn’t add sugar to the pikelet mixture because she feels it is not necessary, especially if the pikelets are topped with jam.
