Spaghetti with Bocconcini and Semi Dried Tomatoes

Saturdays tend to be a busy day often including sporting or other activities. This means by the end of the day everybody is hungry and wants something nice to eat. Pasta is nearly always a winner.

Spaghetti with Bocconcini and Semi Dried Tomatoes


  • 3/4 of a packet of spaghetti
  • 1/3 cup of green olives – pitted
  • 1/3 cup of semi dried tomatoes – plus  reserve 3 teaspoons of oil from the tomatoes
  • 1 whole pack of baby spinach leaves (120 grams) – wash well
  • 1 whole tub (180 grams) bocconcini (baby or cherry style) cheese
  • a good grind of pepper
  • a sprinkle of parmesan cheese


  • Cook and drain spaghetti, set aside
  • Turn the hot plate down and  put a large heap of spaghetti back in the pot along with the pitted olives, all the spinach, tomatoes and the oil
  • Mix around – the spinach will start to wilt at this time – then add the bocconcini chese.
  • divide onto plates and sprinkle with parmesan cheese and pepper to taste
