Cheese sauce is an essential recipe to learn for any budding chef, teen or otherwise. It can form the basis for many different meals. It can be served over steamed vegetables or used to jazz up leftovers to make a new mornay dish.

Anyone who likes cheese sauce should learn to make it in the microwave instead of on the stove top.

Julia’s Easy Microwave Cheese Sauce

  • 2 heaped tablespoons flour
  • 2 good tablespoons olive oil
  • 2 cups milk – Julia uses powdered skim milk for cooking
  • a handful grated cheese – low fat is fine
  • 1 teaspoon Massel vegetable stock powder
  • a dash of mustard or mayonnaise for flavour (optional – depending on what it is being served with)
  • a sprinkle of dried parsley (again optional but it enhances the presentation – fresh is always best but if not available or pushed for time then reach for the dried)

  • in a large glass microwave safe jug, mix olive oil and flour together and microwave for 30 seconds
  • whisk in milk and microwave for 90 seconds and whisk again
  • continue microwaving and whisking in short bursts until sauce is thick and smooth
  • stir in cheese and additional flavouring ingredients
  • use as required
