3 Egg Omelette

Everyone should be able to cook a good omelette…

Rowena: “Recently my fiance came home with a dozen fresh eggs. A colleague from work has chickens and sent these home with him. I decided to make omelettes for dinner…

…It has taken me a long time to be able to cook a really good omelette. When I served this omelette, the compliment from my fiance was ”this is better than the one I buy from the cafe!”


For each omelette you will need:

  • 3 eggs
  • a small handful small mushrooms, sliced and lightly sauteed
  • olive oil
  • 2 sprigs of fresh parsley
  • a dash of milk
  • a pinch of grated cheese


  • saute mushrooms first and set aside
  • whisk 3 eggs in a bowl
  • add the milk
  • heat a small non stick fry pan, add oil
  • when pan is nice and hot add the eggs  you should hear a ‘swoosh’ sound when the eggs hit the pan
  • this next step is very important: with an egg flip slightly move the outside edge of the omelette to the centre allowing the raw egg to cook – repeat this process 2 – 3 times
  • add the cooked mushrooms, cheese and the parsley
  • cover pan with a lid and remove from heat allow to cook for a further 3 mins
  • have a plate ready and with the egg flip fold half of the omelette over itself
  • serve

Once you have the correct non stick pan this is a nice quick easy dinner. Serve with a small green salad on the side of the plate.
