Giant Cous Cous Salad

…I would also tell the children it’s pasta salad or give it another name because I always find the name cous cous really puts people off. There are a few steps in making this but it really works well.”

Giant Cous Cous Salad

Ingredients

  • 1 cup of Giant Cous Cous
  • 1/2  bunch fresh mint – chopped
  • 1/2 bunch coriander – chopped
  • 4 green shallots – sliced
  • 3 table spoons of salad seeds
  • 1/4 of a small pumpkin diced quite small and roasted – takes about 25 mins on 180
  • 1 small red sweet potato – roast on the same tray as the pumpkin

Method

  • Cook giant couscous according to packet – very easy!
  • Bake diced pumpkin
  • Saute mushrooms
  • Once couscous is cooked rinse, cool and add to your big salad bowl
  • Add the fresh herbs and sliced shallots
  • Add the cooked pumpkin and mushrooms
  • Add the salad seeds

Dress salad with olive oil, lemon juice, salt and pepper

Tip – I buy salad seeds from the local green grocer however if you cannot but seeds already in a mix just add whatever seeds you like eg pinenuts, pepitas or sesame seeds.
