Lunch box tips for these hot days…

What a long hot start to the school year!

Always a challenge to come up with some fresh ideas for the lunch box, here is a yummy recipe for Lunch Box Honey Soy Chicken and some tips for keeping things cool…

Lunch Box Honey Soy Chicken

Ingredients:

  • Chicken drumsticks or thigh fillets (the Sisters prefer free range)
  • 1 part honey
  • 3 parts soy sauce (Julia uses Kikkoman)
  • sesame seeds to garnish after cooking (optional)

Method:

  • Preheat oven to 180 deg. C
  • Whisk together honey and soy sauce
  • Lay chicken pieces in a baking dish (lined with baking paper for easy clean-up)
  • Cover with honey soy mixture
  • Bake in oven, basting occasionally and turn once
  • Cook until golden brown – about 40 mins or so
  • Sprinkle with sesame seeds if using
  • Allow to cool completely and wrap in single serve portions and refrigerate or freeze

By freezing the chicken it remains fresh and appetizing. In this hot weather it will definitely defrost by lunchtime. If your children do not like drumsticks use thigh fillets rather than breast as it stands up well to the cooking process and does not dry out.

Fruit cups, grapes, purees, yogurts and many other lunch box items can be frozen and placed in the lunch box so as to remain fresh in hot weather.
