Falafels make a good vegetarian snack. If made at home they are not as dry as some that you can buy from  the deli or kebab shop. You can add these to wraps with salad or serve as nibbles when entertaining. This is also great dish if you have a vegan friend.

The trick with these is using a whole bunch of fresh parsley…



  • 3 cans of chickpeas – drained and rinsed
  • 1 x bunch of fresh parsley
  • 1 tsp turmeric
  • 1 tsp cumin
  • 4 Tblsps self raising flour – if mixture is too wet you may need a little more flour
  • 1 small spanish onion, sauteed


  • Drain chickpeas and process with the sauteed onion, parsley and spices
  • Process till smooth (I never worry if the mixture is not completely smooth)
  • In a bowl add the processed mix and add the flour
  • Kneed flour through chickpea mix
  • Shape into smallish balls or patties and bake of 2 large baking trays (lined with baking paper)
  • Add a generous splash of olive oil
  • Bake at 180 for 35 – 40 mins
  • You will need to turn the falafels about half way through cooking

Serve with tzatziki dip – bought or homemade, either is fine…

Note: mix will look green due to the fresh parsley.
