Rowena’s Easy Mushroom Tarts

One of the best basic pieces of kitchen equipment is a pyrex pie dish. The Sisters each have two of these dishes and when they make a pie or quiche they usually make two. This way you get two dinners made for not much more effort and the leftovers are also good for work lunch.

This is a really easy tart to make mid week.

Rowena’s Easy Mushroom Tarts

Ingredients: (makes 1 large Tart)

  • 10 medium mushrooms
  • 1 whole bunch of chives washed, dried and chopped
  • 1 whole block of Philadelphia cream cheese
  • 1 sheet of puff pastry
  • 2 eggs
  • oil or butter to grease pie dish

Method

  • Grease a pie dish and place frozen sheet of puff pastry over the pie dish, once it is defosted just gently push it into the pie dish
  • Slice mushrooms and saute in a fry pan – set aside and cool
  • In a bowl using an electric beater, add the cream cheese and beat then add the 2 eggs – mix will look a bit lumpy, just beat a little more
  • Add the chives and mushrooms and stir through the cheese mix
  • Pour the cheese mix on top of the pastry and place in oven and bake at 160 for 25 mins

Notes:

You can make small tarts in a muffin tray – you will need 3 sheets of puff pastry and get aprox 12 small tarts.

If you are making 2 large tarts you will need to double the ingredients.

    This was really good, I also had some baby spinach & fetta on hand so I popped those in too. Yummy
