Cauliflower: an under-rated winter vegetable…

Cauliflower is in season now and excellent value. Delicious made into that old favourite Cauliflower Cheese and smothered with cheese sauce, read on for this recipe and Julia’s delicious Cauliflower Mash which is a lighter alternative to mashed potato…

Julia’s Cauliflower Cheese


  • 1 cauliflower
  • 1 quantity cheese sauce
  • grated cheese to cover


  • cut cauliflower into florets and boil until soft (milk added to the cooking water will reduce cooking odours)
  • drain well
  • transfer to a greased oven proof casserole dish
  • cover with cheese sauce and stir gently to combine
  • cover with grated cheese
  • bake at 180 deg C until cheese is lightly browned


Julia’s Cauliflower Mash


  • 1 cauliflower
  • 1/2 cup hot milk (approx.)
  • 1 teaspoon vegetable stock powder
  • instant mashed potato flakes (to thicken if required)


  • boil cauliflower until very soft
  • drain and return to saucepan with hot milk and stock powder
  • with a hand-held blender, puree the cauliflower, milk and stock powder until smooth
  • add instant mashed potato one tablespoon at a time to thicken if required

Serve in place of mashed potato for a lighter change…

Julia and her DH enjoyed this as part of a delicious dinner recently. Served with a wagyu beef sirloin steak cooked to perfection by Julia’s DH and steamed broccolini, it was a fantastic example of a restaurant style meal prepared for a fraction of the cost and enjoyed at home…
