Julia’s DD’s favourite rice pudding…

Julia’s DD loves rice pudding. Until recently though, it was bought rice pudding in the little tubs from the supermarket refrigerator that she liked and not Julia’s homemade baked rice pudding.

Here is a foolproof recipe for rice pudding that is simmered on the stovetop. Based on the absorption method of cooking rice, it is super easy to make…Rice Pudding


1 cup arborio rice – this type of rice gives the best result cooking to a creamier texture

1.5 litres milk – best to use full cream for this recipe

4 tablespoons sugar

1 teaspoon vanilla extract


In a large saucepan, combine milk and rice.

Stir over a medium-high heat, taking care not to let it boil over or stick on the bottom

After the mixture has boiled for 5 minutes, turn of heat.

Add sugar and vanilla, stir well and cover with lid.

Allow to sit undisturbed for at least 2 hours. Check consistency – rice should be fully cooked through and a small amount of liquid should remain. The pudding will continue to thicken on refrigeration.

There you have it – rice pudding that is ‘better than from the shops’…

Note: if you have a gas cooktop you may need to experiment and cook it a bit longer before taking off the heat.
