Celery Soup – Delicious?

Celery is another under-rated winter vegetable. Plentiful and a really good price at the moment, the problem with celery is that often we will buy a bunch only to use a small amount therefore wasting the rest.

Here is a recipe for celery soup which a great way to use up the best part of a bunch of celery. And yes – it is delicious!

Julia’s Delicious Celery Soup


  • 1 bunch celery
  • 1 leek (or onion if preferred)
  • Vegetable stock
  • Zest and juice from 1 small lemon
  • 1/2 cup light cream
  • Tabasco sauce to taste


  • Slice leek or onion and fry in olive oil
  • Chop celery into small dice – this is important as even though the soup is pureed, you will end up with bits of celery string if you take too many short cuts and leave the celery in chunks
  • Add celery to leek/onion
  • Cover with vegetable stock
  • Gently simmer until soft
  • Assess liquid level and remove some if you think the soup will be too runny when pureed, allowing for cream to be added.
  • Puree soup, adding cream, lemon zest and finally juice and tabasco sauce to taste
  • Enjoy!

This soup freezes well and makes a nice lunch when served with a crusty wholegrain bread roll.
