Raspberry Yogurt Muffins

The sisters are always willing to try out new recipes for the lunchbox or afternoon tea.

Here is a recipe for delicious raspberry yogurt muffins.

Raspberry Yogurt Muffins

Ingredients:

  • 2 1/2 cups self raising flour
  • 1/2 cup sugar
  • 1 cup natural yogurt
  • 2 eggs
  • 1 cup milk
  • 1/2 cup sunflower oil (or melted butter)
  • 1 cup frozen raspberries

Method:

  • In a mixing bowl, combine flour and sugar
  • Whisk together yogurt, eggs, milk and oil/butter.
  • Add whisked yogurt mixture to flour and sugar.
  • Mix together quickly and add raspberries – mixture will be quite thick.
  • Fill muffin trays with mixture and bake at 200 deg. C for about 20 mins or until risen and golden.
  • Makes 12 standard size muffins.

Notes:

The trick to light muffins is to mix the muffins as little as possible.

The tang of the yogurt in this recipe works really well with the raspberries.

This is a good way to use up leftover yogurt – try it out with fruit flavoured yogurt if that is what is lurking in the fridge!
