Slow Cooker Vege Curry

Here is a recipe for a quick and delicious vege curry.  Yummy and healthy, it is based around pumpkin, chickpeas and spinach. Cooked in the slow cooker it is one step only, with no pre-browning or anything else required…

Slow Cooker Vege Curry

Ingredients:

  • 1 brown onion, finely diced
  • 2 cloves garlic, crushed
  • 1 chunk pumpkin, cut into chunks
  • 1 tin chickpeas or 1 cup dried chickpeas, cooked
  • 1 jar of your favourite curry base
  • 1 packet frozen spinach or half a bunch of fresh silverbeet

Method:

  • Place onion and garlic in base of slow cooker
  • Add pumpkin and chickpeas
  • Pour in curry
  • Turn slow cooker on to low
  • Allow to cook for about 6 hours
  • Add spinach about 2 hours before you want to serve the curry
  • Serve curry with basmati rice, poppadoms, chutney and yogurt
