Classic Pavlova Recipe

It is Miss 14′s birthday today and Miss 7 is going to make a pavlova for a special birthday dessert. A perfect way to use up a number of eggs as Julia’s chooks are laying plenty of eggs.

Classic Pavlova


  • 8 egg whites
  • 2 cups white sugar
  • 2 tablespoons cornflour
  • 1 tablespoon vinegar (Julia uses apple cider vinegar)
  • 1 teaspoon vanilla extract


  • In a large clean bowl beat egg whites until stiff peaks form. An electric mixer makes light work of this task
  • Gradually add sugar, a little at a time and continue mixing until all incorporated
  • Add cornflour and vinegar, then finally vanilla
  • Using a spatula, make sure there is no flour visible
  • Place mixture in a round mound on a tray lined with non-stick baking paper
  • Bake in a preheated oven at 120 deg. C for about 1 hour or until slightly golden. You want a nice crispy outside edge with a marshmallow centre. It doesn’t matter if it cracks – it will be covered with whipped cream!
  • Allow to cool completely before topping with whipped cream, strawberries and passionfruit (or another combination of fruit)
