Zucchini Slice

Miss 11 decided that she would cook dinner one night this week. This was a win-win situation for her and me. If Miss 11 cooked it would count as part of this week’s homework. It also meant that I did not have to and on that particular night I was a bit stuck for inspiration. It turned out that we had all the ingredients for Zucchini Slice and that is what she decided to make…

Zucchini Slice


  • 8 eggs, beaten
  • 1 cup self-raising flour
  • 4 zucchinis, coarsely grated
  • 1 onion, finely chopped
  • 200 grams chopped bacon – optional, can use leftover chicken or add other veges instead
  • 1/4 cup olive or other oil
  • grated cheese to top


  • Grease a lasagne dish
  • In a large bowl, combine beaten eggs with all other ingredients except cheese
  • Pour mixture into lasagne dish and top with cheese
  • Bake at 180 deg. C for about 40 mins or until golden and cooked through
  • Serve with crusty bread and salad

Note: Leftovers are good cold in the lunchbox…
