Zucchini Slice
Ingredients:
- 8 eggs, beaten
- 1 cup self-raising flour
- 4 zucchinis, coarsely grated
- 1 onion, finely chopped
- 200 grams chopped bacon – optional, can use leftover chicken or add other veges instead
- 1/4 cup olive or other oil
- grated cheese to top
Method:
- Grease a lasagne dish
- In a large bowl, combine beaten eggs with all other ingredients except cheese
- Pour mixture into lasagne dish and top with cheese
- Bake at 180 deg. C for about 40 mins or until golden and cooked through
- Serve with crusty bread and salad
Note: Leftovers are good cold in the lunchbox…
