Chicken stir-fry is a good weeknight dinner. The main thing is to have all the ingredients prepared so that the actual cooking is quick.

For a shortcut there is no problem using a packet of fresh stir-fry veges from the fruit & veg section or a bag of frozen stir-fry veges. You can also buy the chicken stir-fry strips already prepared for another time saver.

The Sensible Sisters prefer free range chicken.

What to do with left over rice or risotto?  This is a perfect dish to make and once again no real measuring is needed.

This quantity will feed 2 adults easily however all you need to do is add an additional two steaks for each extra person and increase the rice and sauce if you want to feed more people.
